Yellow Plum Jam - Recipe

If God gives you plenty plums, make plums jam ;)




1. Remove the stones and squeeze the juice of a lime over the plums. 
2. Boil them for 1 hour on low heat, stirring occasionally. Don't add any water and don't cover the pan.
3. Add the sugar: for 1,800kg of plums (without the stones), I used 500g of special sugar for jam plus 600g brown sugar. Join 2 cinnamon sticks and 2 cloves (you can add more or less, depending on your taste). 
4. Boil for more 30 minutes, again stirring occasionally.


5. Meanwhile, scald jars and lids and put them on the oven for 10 minutes, 100ºC.
6. Fill the jars with the hot jam and let them cool upside down.

Pineapple Upside Down Cake (with Recipe)

I LOVE this old American Cake!!
Because I lost the recipe I usualy use, I had to find a substitute and...tcharannnn...here it is: The old Fashioned Pineapple Upside Down Cake, from the marvelous Bouffe e Bambini!! Thank you, Hanna :)

I'll take this one for my last english class, tomorrow! The teacher, a portuguese/american, said once that this is his favorite!! And I took note :) He deserves, anyway. He's the BEST english teacher ever!!! BE HAPPY, C! Hope he and my dearest colleagues will enjoy it :)

Lemon Zucchini Loaf with Lemon Glaze

I replaced the canola oil for peanut oil. This is a very light cake so it has no butter and just a 1/2 cup of oil.

 I was so looking forward for the experience of Orange/Carrot and Lemon/Apple! 
And here they are!!!!!

From the original recipe, I just replaced the zucchini for carrots and the lemon for orange. Same amounts.


And for the other one, I just replaced the zucchini for apple and kept the lemon
The glazes are lemon or orange, depending on the cake

They are also very good looking, aren't they :)


Receita em Português (Translation of the original by NancyCreative)

Pão (Bolo) de Courgette com Limão

Nota (minha): 1 cup= 235 ml


Ingredientes:
  • 2 cups de farinha tipo 65 sem fermento
  • 2 colheres de chá de fermento em pó
  • 1/2 colher de chá de sal fino
  • 2 ovos L à temperatura ambiente
  • 1/2 cup de óleo de canola (eu uso girassol ou amendoim)
  • 2/3 cup de açúcar (ponho branco ou amarelo)
  • 1/2 cup de buttermilk*
  • 2 colheres de sopa de sumo de limão
  • Raspa de 1 limão
  • 1 cup de courgette ralada com a casca
Preparação:


Ligar o forno a 180ºC. Untar e enfarinhar uma forma de bolo inglês de 13cmx23cm.
Numa taça grande, misturar a farinha, o fermento e o sal. Reservar.
Numa taça de tamanho médio, bater bem os ovos e juntar, de seguida, o óleo e o açúcar e misturar bem. Juntar, de seguida, o buttermilk (ou o iogurte), o sumo e a raspa de limão e voltar a misturar bem. Adicionar a courgette ralada e envolver bem na mistura.
Deitar esta mistura na taça dos ingredientes secos e misturar tudo. Não mexer demasiado.
Deitar a massa na forma e cozer no forno a 180ºC por 45 minutos ou até que um palito inserido no centro do bolo, saia limpo.
Deixá-lo arrefecer por 10 minutos na forma e desenformá-lo sobre uma rede de pasteleiro até arrefecer completamente.
Enquanto o bolo arrefece, pode fazer o Glaze.

Glaze:
·       
  • 1 cup de açúcar em pó
  • 2 colheres de sopa de sumo de limão
Misturar bem o açúcar com o sumo de limão.
Colocar o glaze, com uma colher, sobre o bolo arrefecido. Espere que assente e sirva.

Buttermilk: para 250 ml de leite gordo ou meio-gordo, juntar 1 colher de sopa de vinagre ou sumo de limão. Esperar cerca de 5 minutos para que se forme o coalho. Usar a quantidade que pede a receita.
